Delightful Dukan Cookies

No matter the season, there are always moments when a sweet treat is calling your name. Whether it’s hosting a cozy weekend brunch or a simple night in with family, sometimes the answer is a batch of flavorful, home-baked cookies.

These Dukan Cookies were inspired by my kitchen explorations of Mediterranean-style recipes. Blending ricotta cheese, almond flour and cinnamon, these delicious cookies add a flavor-bursting delight to any occasion. Filled with a slightly sweet filling, they are sure to be a hit with your family, friends, and even yourself!


  • 2/3 cup almond flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 teaspoons ground cinnamon
  • 2 tablespoons ground flaxseeds
  • 2/3 cup ricotta cheese
  • 1/4 cup soft vegan butter
  • 3/4 cup light brown sugar (or coconut sugar)
  • 2 teaspoons vanilla extract
  • 1/2 cup vegan semi-sweet chocolate chips
  • The Filling

    • 1/2 cup vegan semi-sweet chocolate chips
    • 2 tablespoons coconut oil
    • 1/4 cup light brown sugar
    • 1/2 teaspoon salt


    • Preheat oven to 350°F.
    • In a medium bowl, combine almond flour, baking soda, salt, and ground cinnamon.
    • In a separate bowl, mix together ground flaxseeds, ricotta cheese, vegan butter, and light brown sugar until fully combined.
    • Fold dry ingredients into wet and mix until fully incorporated.
    • Stir in vanilla extract and chocolate chips.
    • Grease two baking sheets and roll dough into 1-inch balls, slightly flattening them on the baking sheet.
    • Bake for 8-10 minutes. Let cool for 5 minutes before transferring to a cooling rack.
    • While cookies are cooling, make the filling. In a small saucepan, melt together the remaining chocolate chips, coconut oil, light brown sugar, and salt over low heat.
    • Once fully melted and smooth, spread the filling onto the bottom of each cooled cookie and refrigerate for 20 minutes.
    • Enjoy!
