Ingredients:

  • 1 large butternut squash, peeled and cubed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 large yellow onion, diced
  • 2 cloves garlic, minced
  • 6 cups vegetable stock
  • 1 (13.5 ounce) can coconut milk

Instructions:

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. Toss cubed squash with olive oil, salt, and pepper. Spread onto prepared baking sheet.
