Darius Cooks’ Roasted Butternut Squash Soup

This comforting soup is a wonderful fall dish that is sure to please everyone! Made with roasted squash and creamy coconut milk, it’s an easy but flavorful meal that can be prepared in no time.


  • 1 large butternut squash, peeled and cubed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 large yellow onion, diced
  • 2 cloves garlic, minced
  • 6 cups vegetable stock
  • 1 (13.5 ounce) can coconut milk


  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. Toss cubed squash with olive oil, salt, and pepper. Spread onto prepared baking sheet.
  3. Bake squash for 40-45 minutes or until squash is tender and golden.
  4. Heat a large pot over medium-high heat. Add onions and garlic and cook for about 5 minutes or until softened.
  5. Add roasted squash, vegetable stock, and coconut milk. Bring to a boil and then reduce to a low simmer.
  6. Simmer for 15-20 minutes or until vegetables are very tender. Using an immersion blender, puree soup until smooth.
  7. Season with additional salt and pepper to taste and serve.
