Cracker Barrel Chicken and Rice

Cracker Barrel Chicken and Rice is a classic comfort food that combines tender chicken and creamy, cheesy rice. It’s an easy weeknight family favorite that will quickly become a staple meal in your house. The addition of steamed broccoli and a side salad will complete the meal for a complete, balanced, and nutritious dinner that everyone will love.


– 2 Tbsp olive oil
– 1 lb boneless, skinless, chicken breasts, cut into 1-inch cubes
– 1/2 tsp garlic powder
– 1/2 tsp onion powder
– 1 tsp paprika
– 2 cups chicken broth
– 1 cup uncooked white long-grain rice
– 1/2 cup Panko bread crumbs
– 1/4 cup freshly grated Parmesan cheese
– 1 Tbsp Italian seasoning
– 2 Tbsp butter
– 1/2 cup fresh or frozen green peas
– Salt and pepper to taste


1. Heat olive oil in a large skillet over medium heat. Add the cubed chicken and season with garlic powder, onion powder, and paprika. Cook for about 5 minutes, stirring often, until chicken is lightly browned and cooked through.

2. Add the chicken broth and rice to the skillet, stirring and scraping any browned bits from the bottom of the skillet. Cover and reduce heat to low. Simmer for about 15 minutes, until all of the liquid has been absorbed and the rice is cooked.

3. In a small bowl, combine the Panko bread crumbs, Parmesan cheese, and Italian seasoning. Sprinkle the mixture over the top of the chicken and rice mixture. Dot the top with butter. Cover and cook for an additional 5 minutes, until the topping is lightly browned.

4. Stir in the peas and cook for an additional 2-3 minutes, until heated through. Season with salt and pepper to taste and serve. Enjoy!
