Cracker Barrel Squash Casserole Recipe

2 pounds of squash (yellow squash or zucchini)
1/4 cup butter
1/4 cup chopped onion
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon white pepper
3/4 cup chicken broth
1 cup milk
1/2 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
1 cup crushed crackers


1. Preheat oven to 350°F.
2. Slice squash into 1/4-inch slices and set aside.
3. In medium saucepan, melt butter over medium heat and sauté onion until tender.
4. Add flour and seasonings; blend well.
5. Slowly stir in chicken broth and milk and bring to a boil, stirring continuously.
6. Reduce heat and simmer until thickened, stirring continuously.
7. Blend in cheeses until melted.
8. Place squash in greased 2-quart casserole dish; pour cheese sauce over it and top with crushed crackers.
9. Bake for 40–45 minutes, or until golden.
