Delicious Coconut Oatmeal Banana Pancakes


  • 1/3 cup of instant oatmeal
  • 2 tablespoons of baking flour
  • 3 tablespoons of desiccated coconut
  • 1 finely-grated banana
  • 2 tablespoons of melted butter
  • 2 eggs
  • 1 teaspoon of caster sugar
  • 1 teaspoon of vanilla extract
  • Pinch of salt


  1. In a medium-sized bowl, combine the oats, baking flour, coconut, and grated banana.
  2. In a separate bowl, whisk together the melted butter, eggs, caster sugar, vanilla extract, and salt until the mixture is light and frothy.
  3. Gently stir the wet ingredients into the dry ingredients until everything is just combined. Don’t overmix.
  4. Heat some oil in a large non-stick skillet or griddle over medium heat. Once the pan is hot, reduce the heat to low.
  5. Using a large spoon, scoop out roughly ¼ cup of batter and pour it into the pan. Gently spread the batter out with the back of the spoon to form a 4 – 5-inch pancake.
  6. Cook the pancakes for 2 – 3 minutes on the first side, until lightly browned and some bubbles begin to form on the surface. Flip the pancakes and cook for an additional 1 – 2 minutes on the other side. Remove from the pan and repeat with the remaining batter.
  7. Serve the pancakes warm, topped with your favorite topping – maple syrup, honey, jam, diced banana etc.
