Delicious Coconut Oatmeal Banana Pancakes
Ingredients
- 1/3 cup of instant oatmeal
- 2 tablespoons of baking flour
- 3 tablespoons of desiccated coconut
- 1 finely-grated banana
- 2 tablespoons of melted butter
- 2 eggs
- 1 teaspoon of caster sugar
- 1 teaspoon of vanilla extract
- Pinch of salt
Method
- In a medium-sized bowl, combine the oats, baking flour, coconut, and grated banana.
- In a separate bowl, whisk together the melted butter, eggs, caster sugar, vanilla extract, and salt until the mixture is light and frothy.
- Gently stir the wet ingredients into the dry ingredients until everything is just combined. Don’t overmix.
- Heat some oil in a large non-stick skillet or griddle over medium heat. Once the pan is hot, reduce the heat to low.
- Using a large spoon, scoop out roughly ¼ cup of batter and pour it into the pan. Gently spread the batter out with the back of the spoon to form a 4 – 5-inch pancake.
- Cook the pancakes for 2 – 3 minutes on the first side, until lightly browned and some bubbles begin to form on the surface. Flip the pancakes and cook for an additional 1 – 2 minutes on the other side. Remove from the pan and repeat with the remaining batter.
- Serve the pancakes warm, topped with your favorite topping – maple syrup, honey, jam, diced banana etc.
