Tex-Mex Beef and Bean Casserole

Ingredients:
- 1 pound lean ground beef
- 1 large onion, chopped
- 1 (14.5 ounce) can chili beans in sauce
- 1 (15.25 ounce) can corn, drained
- 1 (14.5 ounce) can stewed tomatoes
- 1 (4 ounce) can chopped green chilies
- 1 teaspoon ground cumin
- ½ teaspoon garlic powder
- 2 tablespoons fresh chopped cilantro
- 1 (8 ounce) package shredded cheddar cheese
Instructions:
- Preheat oven to 375 degrees F.
- Heat a large skillet over medium-high heat. Add the beef and onion, and cook for about 5 minutes, stirring to break up the beef.
- Stir in chili beans, corn, tomatoes, green chilies, cumin, garlic powder, and cilantro. Cook until mixture is heated through. Transfer to a 9 x 13-inch baking dish.
- Sprinkle the cheese over the top. Bake for 25 minutes or until cheese is melted and bubbly.
- Serve warm with a tossed salad, crusty bread, and a glass of your favorite drink.
