The Sweet and Savory Coconut Chicken Chinese

Ingredients
– 1 1/2 pounds boneless skinless chicken breasts, cubed
– 1/2 cup sweet coconut milk
– 2 tablespoons Hoisin sauce
– 2 tablespoons soy sauce
– 1 tablespoon honey
– 1 tablespoon grated fresh ginger
– 2 cloves of garlic, minced
– 2 tablespoons vegetable oil
– 1 teaspoon sesame oil
– 2 tablespoons cornstarch
– 2 tablespoons water
– 1/2 teaspoon chili flakes
– 1/2 cup unsweetened shredded coconut
– Salt and pepper to taste
Instructions
1. Combine the coconut milk, Hoisin sauce, soy sauce, honey, ginger and garlic in a large bowl and mix together.
2. Add the chicken cubes to the marinade and coat the pieces evenly.
3. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 1 hour.
4. Heat the vegetable and sesame oils in a large skillet over medium-high heat.
5. Remove the chicken from the marinade and add it to the skillet.
6. Sauté the chicken for about 7-8 minutes, or until cooked through.
7. Meanwhile, in a small bowl, mix together the cornstarch, water and chili flakes.
8. Add the cornstarch mixture to the skillet, along with the shredded coconut.
9. Stir-fry the ingredients for an additional few minutes, or until the coconut begins to lightly crisp.
