Chicken Salad Chick Cookie

Ingredients:

  • 1/2 cup butter, melted
  • 3/4 cup packed brown sugar
  • 1 large egg
  • 1 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup quick oats
  • 1/2 cup chopped pecans
  • 1 cup cooked, chopped chicken
  • 1/2 cup dried cranberries

Instructions:

  1. Preheat oven to 350°F and grease a baking sheet with cooking spray.
  2. In a medium bowl, whisk together the melted butter, egg, and brown sugar until blended.
  3. In a separate bowl, sift together the flour, baking soda, and salt. Then add to the wet ingredients and mix until combined.
  4. Stir in the oats, chopped pecans, chopped chicken and cranberries until mixed.
  5. Drop dough by rounded tablespoonfuls onto prepared baking sheet, leaving a few inches in between cookies.
  6. Bake for 10-12 minutes or until edges are golden brown.
  7. Allow to cool before serving.
