Deliciously Flavoursome Candida Soup

2 tablespoons of olive oil, 1 onion diced, 2 cloves of garlic minced, 1 teaspoon of fresh ginger grated, 1 habanero pepper, finely chopped (optional), 2 cups of diced pumpkin, 1 carrot diced, 1 can of diced tomatoes, 1 tablespoon of red curry paste, 4 cups of chicken or vegetable stock, 2 teaspoons of Thai fish sauce, 1 can of coconut milk, 4 cups of baby spinach leaves, Salt and pepper, to taste


Start by heating the olive oil in a large pot over medium-high heat. Add the onion, garlic, and ginger and cook until fragrant and the onion is softened (about 3 minutes). If using the habanero pepper, add this now as well.

Next, add the pumpkin and carrot and cook for a few minutes until the vegetables are lightly browned. Add the diced tomatoes and red curry paste and cook for another minute, stirring to combine.

Then, add the chicken or vegetable stock, Thai fish sauce, and coconut milk and bring to a boil. Reduce the heat and let the soup simmer for 15-20 minutes, until the vegetables are tender.

Add the baby spinach leaves and stir until just wilted. Season to taste with salt and pepper.

Serve the Candida Soup warm, with extra spinach leaves and freshly grated ginger, if desired.
