Cajun Smothered Chicken Recipe

This hearty chicken dish features a flavorful mixture of tomato sauce, seasonings, and potatoes. Not only is it high in protein, it’s also loaded with a number of vitamins and minerals for a healthy, balanced meal. Plus, it’s simple to prepare, making it perfect for busy weeknights!

Ingredients:

– 4 skinless and boneless chicken breasts
– 2 tablespoons olive oil
– 1 teaspoon garlic powder
– 1 teaspoon paprika
– 1 teaspoon cayenne pepper
– 1 teaspoon dried thyme
– ½ teaspoon salt
– 1 small onion, finely chopped
– 1 green pepper, finely chopped
– 1 cup tomato sauce
– 2 cans low-sodium chicken broth
– 2 cups cubed red potatoes

Instructions:

1. Preheat oven to 350°F.

2. In a medium bowl, mix together olive oil, garlic powder, paprika, cayenne pepper, thyme, and salt.

3. Place chicken breasts in a greased 9×13 baking dish and pour spice mixture over chicken. Bake for 25 minutes.

4. Heat a large skillet over medium-high heat. Add onion and green pepper, and cook, stirring occasionally, for 5 minutes.

5. Add tomato sauce and chicken broth to the skillet. Bring to a boil and let simmer for 5 minutes.

6. Add potatoes and cooked chicken to the skillet. Cover and let simmer for 15 minutes, or until potatoes and chicken are cooked through.
