A Festive Twist on Traditional Cookies with Butternut Cookies
The holidays are around the corner and this time of the year, nothing is better than a batch of fresh-baked cookies. For a festive twist, why not try my Butternut Cookies? Rich and buttery, with a hint of nutty sweetness, these cookies are sure to be a hit.
The creaminess of butternut squash blended with brown sugar and softened butter form the base of this oh-so-sweet recipe. A pinch of nutmeg gives the cookies their unique flavour, while the addition of wheat flour and baking powder to bind the mixture together, creates a delicious lightness.
•1 cup wheat flour
•1 tsp baking powder
•1/2 tsp salt
•1/4 tsp nutmeg
•1 cup melted butter
•2 cups brown sugar
•1 cup butternut squash puree
1. Preheat The Oven and Grease The Pan
Preheat the oven to 350°F and grease a baking sheet.
2. Mix Dry Ingredients
In a large bowl, whisk together the flour, baking powder, salt and nutmeg. Set aside.
3. Cream The Butter And Sugar
In another bowl, cream together the melted butter and sugar until light and fluffy. Beat in the egg, then stir in the butternut squash puree.
4. Blend Wet And Dry Ingredients
Using a wooden spoon, gradually blend the dry ingredients into the wet ingredients until a soft dough is formed.
5. Bake The Cookies
If the dough is too soft to form into balls, place it in the refrigerator for 15 minutes. Using your hands, form the dough into 1-inch balls and place them 2 inches apart on the greased baking sheet. Bake for 12–15 minutes, or until the tops of the cookies are lightly browned.
Remove from the oven and let cool for 5 minutes before serving.
