– 200 g strong white flour
– 200 g wholegrain flour
– 300 g sourdough starter
– 10 g salt
– 300 g water

2. Slowly add in the water to achieve a soft dough-like consistency. Knead the dough for 8-10 minutes.
3. Place the dough in an oiled bowl, cover tightly with cling film, and leave in a warm place to rise for 8-12 hours, until doubled in size.
4. Turn the dough onto a floured work surface and shape into a ball. Place it in a greased loaf tin, cover it with cling film, and leave it to rise again, for another 1-2 hours.
5. Preheat the oven to 220°C.
6. Remove the cling film, spray the top of the loaf with water and bake for 40-45 minutes.
7. Remove the loaf from the tin and leave to cool on a wire rack.
