  • 3 Tbsp. lightly packed brown sugar
  • 2 Tbsp. raisins
  • 1 cup buttermilk
  • 2 Tbsp. melted butter
  • 1 Tbsp. vegetable oil

Instructions:

  • Preheat oven to 375 degrees F (190 C/Gas Mark 5).
  • Combine the flour, coconut, baking powder, baking soda, lemon pepper, salt, and sugar in a bowl and mix until well combined. Add the raisins and mix until combined. Set aside.
  • In a separate bowl, whisk together the buttermilk, melted butter, and vegetable oil. Add the wet ingredients to the dry ingredients and mix until just combined. Do not over mix.
  • Lightly dust a baking sheet with flour and shape the dough into a flat circle about 1 inch thick. Cut the dough into 12 equal wedges.
  • Bake the wedges for 25 to 30 minutes until lightly golden.
  • Serve warm with butter, jam, honey, syrup, or your favorite topping.
