Anisette Cake – A Fruity and Refreshing Treat

I wanted to see how the anisette liqueur would taste in a cake form, and voila, Anisette Cake was born!”

Ingredients

– 2 large eggs
– 1/2 cup vegetable oil
– 2/3 cup anisette liqueur
– 1 teaspoon lemon zest
– 1 cup freshly squeezed orange juice
– 1 teaspoon almond extract
– 2 cups all-purpose flour
– 2 teaspoons baking powder
– 1/4 teaspoon baking soda
– 1/2 teaspoon salt
– 3/4 cup granulated sugar

Directions

1. Preheat the oven to 350°F (177°C). Grease and flour an 8 or 9 inch round or square cake pan.

2. In the bowl of a stand mixer, beat the eggs and oil together until combined.

3. Add the anisette, lemon zest, orange juice, and almond extract and mix until combined.

4. In a separate bowl, mix together the flour, baking powder, baking soda, salt, and sugar.

5. Add the dry ingredients to the wet ingredients and mix until just combined.

6. Pour the batter into the prepared pan.

7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

8. Allow the cake to cool slightly before serving.
