Algerian Mechoui

– 1 whole lamb, about 5-7 kilograms

5. Roast the lamb for 3-4 hours or until the internal temperature reaches at least 145°F.

6. Remove the lamb from the oven or grill and allow to rest for 10-15 minutes before carving.
